Gingery Beet and Sweet Potato Soup

Using seasonal vegetables is vital to survive in Germany during the winter. I learned this in the Wochenmarkt (Week market) after few weeks of arriving. Germans cherrish a lot their regional products and especially seasonal ones. Living in the Netherlands allowed me to get almost any basic ingredients I needed with more or less same price throught a year. There wasn’t much fluctuations in supply or price. So first I was sad that I can’t get my usual veggies like aubergines and string beans in moderate price \. But humans in the end adapts and here I am creating a new soup for winter with seasonal veggies: beet roots, sweet potatoes, and ginger.

This soup is so comforting and warm it will make you feel instantly good. Especially in these cold winter days, this soup can help you to boost your immune system and keep you away from any cold better than an apple. It’s subtle sweetness with the spiciness from ginger is perfectly balanced. You can top it with a bit of olive oil or coconut milk with some dried thyme which elevates the richness of this soup.


2 inch size of ginger

3 cloves of garlic

1 medium size onion

1 medium size sweet potato

2 1/2 cups of water

1/2 tsp of magic powder for beet roots

Extra virgin olive oil

Salt & pepper
